From deep in the heart of Carmarthenshire, this brie-like cheese starts off being made at the Caws Cenarth farmhouse using their recipe for Caerffili. The result is a deeply satisfying, slightly salty soft cheese, with a light edible rind. It is, as they say, a beautiful ‘white pearl’, which is where the cheese gets its Welsh name.
