A close cousin to the Époisses, this semi-soft cow’s cheese is also washed in Marc de Bourgogne brandy, and annatto, giving it a noticeable orange rind and champagne aroma. Inside, the cheese oozes out at room temperature, a rich, creamy, piquant flavoured cheese. Perfect on its own, with crackers, or with a little champagne poured into its dimple, which it acquires from only being turned once in the making process.
