Originally a cheese for Welsh miners in the area around Caerphilly, milk shortages moved the majority of production to England. The war then forced Cheddar producers to switch to Caerphilly as it was quicker to make. Today the Trethowan Brothers have combined traditional Welsh cheese-making experience with the best organic milk they can find in Somerset, to produce the ultimate Caerphilly.
