Manchego is a firm, buttery cheese made with the milk of Manchega sheep from La Mancha in Spain, and is easily the most popular Spanish cheese in the world. While sharing a similar semi-hard and light texture, the Semi Curado variety is a little milder than its Curado counterpart, having a grassy, fruity tang, where the Curado is much more nutty with caramel notes.
