After Alan and Jenny Gray found a 17th Century recipe for nettle-wrapped cheese in their attic, Cornish Yarg (‘Gray’ backwards) has become spectacularly popular as a modern British classic, while still in touch with its local roots. The nettle coating affects the way the cheese matures, and the result is a wonderfully palatable cheese - a texture like Manchego, and an almost Caerphilly flavour.
